ABOUT THE PROCESS

This unique coffee is produced by Juan Puerta, Flavor Engineer of Sens Coffee using a method called osmotic dehydration. The osmotic dehydration process involves placing coffee seeds in a CO2-filled vat to remove oxygen. This oxygen is bubbled into water to create "mosta" or "liquor." After draining the liquor, Juan adds tropical fruits from his farm to the coffee seeds. CO2 is reapplied, allowing the seeds to absorb the fruits' flavors through osmosis.
