Juan David Puerta is a young, forward-thinking producer from QuindĆo, Colombia, and the founder of Sens Coffee. Unlike many growers in the region, Juan wasnāt raised in the coffee industry ā he discovered it later and dove in with a fresh, hungry curiosity. That outsider perspective fuels his creativity today. Heās part of a new wave of Colombian producers blending modern processing techniques, intentional fermentation, and selective harvesting to showcase the vibrant potential of their terroir. Meeting him in October was truly inspiring ā his passion, humility, and drive to elevate his community shine through in every coffee he produces.

With a background in food science and engineering, heās honed his signature mossto processāusing a supersaturated solution to dehydrate cherries through osmotic pressure. This lot, co-fermented with mango with notes of mango, honeydew, and pineapple. Itās a wild, tropical, and imaginative cup that showcases Juanās precision and creativity.
