ABOUT THE PROCESS
Harvest begins with hand-selecting only the ripest cherries, which are sealed into airtight tanks to ferment anaerobically for 96 hours. With oxygen out of the equation, microbial activity shifts toward yeast-dominant pathways that build sweetness and fruit-forward character. The cherries are then pulled, rinsed, and laid out on raised beds to dry slowly in the shade. The result is a vibrant, sweet cup loaded with strawberry, guava, and honeydew, rounded out by a creamy finish that makes this coffee impossible to put down.
